Homemade Protein Bars

Healthy. Delicious. Sweet. Healthy. Perfect!


 



Ingredients:
  1. 1 scoop protein mix (I use Shakeology!)
  2. 1 cup gluten free quick oats
  3. 4 Tbsp. apple sauce
  4. 2 Tbsp. of peanut butter
  5. 1 Tbsp. honey
  6. Coconut shavings (any amount you want)
  7. Chocolate chips or Peanut Butter chips 

Mix items 1-6 together in a bowl.  Mash and mix with a spoon to even the ingredients out.  Then form them into an 8x8 pan sprayed with coconut oil or Pam, push chips on top and put them in the freezer for about 30 min-1 hour!  ENJOY!!





I hope you like them as much as we did!  You could also form them into balls if you'd rather!  My kids and I had a ton of fun making them together, as you can see the video above!  I encourage you to try it with your kiddos and let me know what yall thought!  If you video it, tag me in it so I can see!  @kristinkfitness  =)  They were a hit over here and now I make them often for their after school snacks!  It's so nice having a snack that they love and I can feel good knowing it's healthy for them!  =)  WIN, WIN!!

Day 8 of the 21 Day Fix

The start of my second week!  I'm not going to lie, it feels really good to have made it past the weekend and still be on track!  Today was Total Body Cardio Fix and I really love this one!   I do think Autumn is a liar when she says the "surrenders" are the hardest move of the day!  =)  I beg to differ and feel like the knee pulls are harder but maybe that's just me!  Anyway, it was another great workout!

 I of course had my Chocolate Shakeology for breakfast and then for lunch I made this delicious salad!  I love that the containers are just so easy to use!  This program really is fool proof and if you read and follow the Meal Guide they provide for you then there is really no excuses and you WILL see results!  

 1 can of salmon, spinach, strawberries/blueberries, feta, and sunflower seeds.  


 I love that the portions are pretty big too!  You really do get enough food to fill you up and it helps you realize how much you were overeating in the first place!!


Day 8 down, 13 more to go!

Peanut Butter Banana Ice Cream

Ahhh, ice cream!  Who doesn't love ice cream?  I know my family loves it and many times after my kids finish their plates they ask if they can have a bowl.  We usually only allow desserts on the weekends but when your dessert is this I am willing to make an exception!

If you read my blog you know I am all about EASY recipes so you really can't get any easier than this!  There are only 2 ingredients!!  That's right, 2!  

  1. 3 Frozen Bananas (peel them and then freeze them!)
  2. 3 Tbsp. of Peanut Butter

Blend the two together and you're done!  I like to add some chocolate chips to it (after you've blended it) for a little crunch and extra sweetness!  My kids devour this and it's something I can feel good about giving them for dessert or an after school snack!  Try it and let me know what you think!  



If you're doing the 21 Day Fix I would count this as a purple and 2 teaspoons OR you could just count it as a yellow like we do the rest of the desserts from the Menu Guide!  =)
