Did you know??

Did you know I used to sell candles, bags, and then jewelry with 3 different well known companies over the years? I was always searching for something that would bring me passion and a purpose outside of being a mom but would still give me the freedom to stay at home with my babies, make my own schedule, and create an income for our family. So I tried these different things and always wished  it would be super successful and that I could win these amazing trips some of the other consultants were earning but it seemed impossible for a few reasons:  

1. I wanted a job that gave me MORE time with my family and in order to rock those businesses I had to have a lot of parties and do shows on the weekends which I was not willing to do  


2. I'm not a sales person so starting at 0 sales at the beginning of every month and trying to encourage people to buy something that is a WANT instead of a NEED was hard! 


3. I grew tired of each product. They weren't things you HAD to have and although they were fun at first, they lost their luster like most new "toys" do.

So there I was, a stay at home still searching for something MORE! Then I was invited to join an accountability group and I didn't realize my whole life was about to change. I didn't workout consistently at the time, I ate cookies for lunch, was tired ALL THE TIME,and could only do 2 pushups but I thought maybe this group would help me feel better?! A week went by and I was consistent with my workouts, 2 weeks, and then a whole month and I was sticking to it!  😳      People started noticing a change in my energy and happiness, my clothes started fitting me better and I was feeling more confident and motivated! No quick fix just fitness, nutrition, and support did the trick and because people were asking me and interested in joining me, sooooo I signed up as a coach!

I don't have to carry inventory, I don't have to host parties or do shows, I just live my best life and help others do the same! I literally get paid for something I'd be doing anyway and THAT blows my mind! I've now earned those FREE trips I used to dream about and have gone on a trip EVERY YEAR since becoming a coach! God answered my prayers by giving me a passion and purpose that I wake up SO EXCITED to do everyday! Now don't get me wrong, I am NOT knocking all the other sales companies that I worked for, or that my friends work for!   I LOVE those products, buy them often, and I'm truly SO PROUD of any of my friends or other women that build a business doing what they love...this is just my journey and what was right for me so please don't take it personal!  😊

Spinach and Bacon Quinoa Muffins


The kitchen and I aren't the best of friends so when I made the decision to start 80 Day Obsession I was a little nervous that I would get bored with the food if I didn't experiment with some recipes!  I wanted them to be easy and convenient which led me right to these muffins!  


The perfect pre workout meal with the right combo of carbs, protein, and veggies to fuel your body and give you the energy you need to KRUSH it!!  
3 muffins count as 1 Red, 1 Green, 1 Yellow, and 1tsp. for those of you following the 80 meal plan.  



Here they are before you put them in the oven.  Not pretty (remember the kitchen and I aren't friends!) but they smell and taste delicious!!!


Ingredients:
  • 1 cup spinach
  • 1 Tbsp. green onions
  • 1 egg, scrambled
  • 2 slices cooked turkey bacon, chopped
  • ½ cup cooked quinoa
  • 1 tsp. olive oil

Directions: Heat oven to 375° F. Cook the spinach with olive oil until just wilted. Transfer spinach to a bowl, add all of the remaining ingredients, and stir to combine. Then spoon the mixture into a muffin pan lined with muffin cups or coated with nonstick spray. Press into pan.  Bake for 20 minutes. This amount of ingredients makes three muffins (one serving), and can be easily multiplied to make more.

TIP: I quadrupled this recipe so that I would have enough for 4 days!  You could make even more and freeze them if you wanted!  You can also mix it was raw eggs instead of scrambled to help them stick together better!

80 Day Obsession - Week 1

Nutrition has always been my weakness!  I can follow a workout plan but giving up wine, cookies, margaritas, and queso is just a little too much to ask don't you think?    

But after Thanksgiving, Christmas, and all the planning as we rebuild our home after Hurricane Harvey...I needed some more structure and was really looking forward to this upcoming challenge called 80 Day Obsession!  

I could have gone in with just the fitness...but "what if" kept ringing in my ears.  
What if I followed the fitness AND nutrition???   
What would happen to my body?  
How would I feel?  
What if it impacted my family as an example of healthier eating?  
What if I inspired others?  
What if it helped me help more people?  
So I decided to find out...

WHAT IF I GO ALL IN????  



The first step was learning the meal plan, meal planning, grocery shopping and then prepping!
 


I will say that I have planned my meals for the week on a schedule many times but this was my FIRST TIME to ever prep everything so it was ready to go all week long.  It sure made it easier because guess what?  The hardest part is the decision..."What do I eat"...leftover pizza?  a sandwich with some chips?  cookies??  a salad that would take forever to put together?  

But if it's already planned and prepped, I don't have to decide.  I just grab and go!  So Sunday before day 1, I prepped food.  It took a while but I know it will get easier!  

 Quinoa Turkey Bacon Muffins are so delicious and easy to grab and eat on the go if I have to!

 Strawberries and grapes...perfectly portioned!  

 Grilled chicken stripes.  They're easy and can have plain or throw in a quinoa bowl! 

 After I was done prepping I enjoyed my last glass of wine for a while.  Believe me, I enjoyed ever last drop!  Pretty sure I had a brownie or 3 also.  #earnedit

 Week 1 went GREAT!  The meal plan was the easiest meal plan I've ever tried to follow.  I wasn't hungry or deprived feeling and I loved the workouts!  The use of the bands, sliders, and weights kept things changing so I never got bored!

 Quinoa, peppers, onions, black beans, and ground meat.

 Tomatoes and cucumber mixed with avocado and lime.

When volunteering at the kids school I packed my food in containers and was ready to stay on track and eat when I was supposed to eat!  I was pretty proud! 

I even went on a date with Kyle Friday night and out to lunch after church Sunday and still stayed true to the plan!  When you make a goal and stick with it you realize that the only thing holding you back was YOU...the limits we put on ourselves, the habits we think we can't change, the lack of planning...all it takes is YOU realizing that YES YOU CAN!!!  That is such a great feeling and I am so ready for week 2!  I know my whole journey might not look this great but it's all about PROGRESS not perfection!
